Swiss Veggies

Standard

A nice spin from the normal green bean casserole Grandma used to make. Swiss Veggies come with a unique and fabulous flavor all of it’s own, right down to the homemade french fried onions!

Give it a whirl, see what you think. You may find yourself coming back for more!

What you will need:
1 can of gluten free cream of mushroom
1/3 cup sour cream
1/4 tsp black pepper
1 16 oz bag of frozen california blend vegetables (cauliflower,carrots, and broccoli) thawed
1 1/3 cup of french fried onions (recipe below)
1/2 Cup shredded swiss cheese
Directions:
  1. Stir soup, sour cream, black pepper,vegetables, 2/3 cup onions and 1/4 cheese in a 2qt casserole dish. cover
  2. Bake at 350° for 40 min or until vegetables are tender. Stir
  3. Sprinkle remaining onions and cheese and bake for an additional 5 minutes
French Fried Onions
What you will need:

3 large onions, sliced into thin rings
2 cupsmilk
2 cups AP gluten free flour
oil (for frying
salt

Directions:
  1. Soak the onions in the milk for 5 minutes.
  2. Heat the oil in a large skillet or deep fryer.
  3. Take a handful of onions and run them through the flour with a fork to coat.
  4. Fry in batches in the oil, stirring as needed to brown evenly.
  5. Drain on paper towels and season to taste.
  6. Store in an air-tight container.

Cheesecake Supreme

If there is one dessert that makes my mouth water, It is cheesecake. Something I never though much about as a kid. I was convinced that it was an acquired taste, until my own kids devoured their first piece. To this day give them the option of cake or cheesecake…they will more than likely answer cheescake, unless it is turtle cheesecake. (my youngest says she doesn’t like turtle cake, she hasn’t quite figured out that there are not actual turtles made with it :))

I first tried this recipe while I was at a friends home party and immediately fell in LOVE with it. I HAD to make it for my husband, who is also a cheesecake fanatic. I substituted a few ingredients to make it gluten free and voila…from my sweet tooth to yours!

What you will need:

Crust:

1 Cup gluten free graham cracker crumbs
3 tbsp sugar
3 tbsp butter

Cheescake:

4 8oz packages of cream cheese
1 Cup sugar
3 tbsp AP gluten free flour
4 eggs
1 Cup sour Cream
1 tbsp Vanilla

Directions:

Crust:

  1. combine crumbs, sugar and butter
  2. press into the bottom of a 9″ springform pan
  3. Bake at 325° for 10 minutes

Cheescake:

  1. Combine cream cheese, sugar and flour
  2. mix on medium speed until well blended
  3. add eggs, one at a time, mixing well after each addition.
  4. Blend in sour cream and vanilla; pour over crust
  5. Bake at 450° for 10 minutes.
  6. Reduce temperature to 250°; continue baking for 1 hour
  7. Loosen cake from rim of pan; cool before removing rim. chill
  8. Top with your favorite toppins just before serving.
